To setup a table from scratch, click the Table icon in the edit bar. (This is the one right above the word "Font". Then select how many columns and rows you want. Usually it is best to erase the "width" field so that the table will resize as large as necessary. If you are using the table just for formatting a page, set the border to 0. Now you can start filling in the table. If you need more rows or columns, right-click on the table and select Row -> Insert Row or Column -> Insert Column.
